Chickpea Risoni
Chickpea Risoni
Ingredients:
- 2 tbsp olive oil 
- 1 brown onion chopped 
- 500g orzo/ risoni 
- 2 garlic gloves (or minced garlic) 
- 1L Chicken or vegetable stock 
- 1 can crushed tomatoes 
- 2 cans chickpeas 
- ½ cup finely grated parmesan 
Method:
- Heat the oil in a very large pot over medium-high heat. Add the onion and stir until golden brown. Add the orzo and garlic, season with salt and pepper and stir for about 1 minute. 
- Add in the broth, tomatoes and chickpeas, bring to a boil. Cover and reduce heat. Stirring occasionally until most liquid is absorbed and the pasta is cooked (around 1- minutes). Stir in the parmesan cheese. Take off the heat. (Optional garnish with chopped basil)
