Chickpea sandwich
A chickpea sandwich is a nutritious, delicious lunch option.
Serves: makes 2 sandwiches
Ingredients:
1 can chickpeas
4 slices of wholemeal/wholegrain bread
½ cup greek yoghurt
1 tomato
1/2 red onion diced
lettuce shredded
1 carrot (ribbons or shredded)
1 can beetroot 225g
Methods:
Drain and rinse chickpeas. Place about 3/4 in a bowl and mash completely with a fork or potato masher. Add the remaining chickpeas, yoghurt and diced onion to the bowl. Mix together.
Assemble the sandwich using the chickpea mixture, adding lettuce, carrot and beetroot (optional other salads)
