Chickpea sandwich
A chickpea sandwich is a nutritious, delicious lunch option.
Serves: makes 2 sandwiches
Ingredients:
- 1 can chickpeas 
- 4 slices of wholemeal/wholegrain bread 
- ½ cup greek yoghurt 
- 1 tomato 
- 1/2 red onion diced 
- lettuce shredded 
- 1 carrot (ribbons or shredded) 
- 1 can beetroot 225g 
Methods:
- Drain and rinse chickpeas. Place about 3/4 in a bowl and mash completely with a fork or potato masher. Add the remaining chickpeas, yoghurt and diced onion to the bowl. Mix together. 
- Assemble the sandwich using the chickpea mixture, adding lettuce, carrot and beetroot (optional other salads)
