Chickpea sandwich

A chickpea sandwich is a nutritious, delicious lunch option.

Serves: makes 2 sandwiches

Ingredients:

  • 1 can chickpeas

  • 4 slices of wholemeal/wholegrain bread

  • ½ cup greek yoghurt

  • 1 tomato

  • 1/2 red onion diced

  • lettuce shredded

  • 1 carrot (ribbons or shredded)

  • 1 can beetroot 225g

Methods:

  • Drain and rinse chickpeas. Place about 3/4 in a bowl and mash completely with a fork or potato masher. Add the remaining chickpeas, yoghurt and diced onion to the bowl. Mix together.

  • Assemble the sandwich using the chickpea mixture, adding lettuce, carrot and beetroot (optional other salads)
