Lentil, mushroom & rice bake
This lentil, mushroom & rice bake is a hearty bake which uses cost-effective ingredients.
Ingredients:
- 2-4 tbsp olive oil 
- 1 brown onion diced 
- 200g cup mushrooms diced 
- 1 cup milk 
- 2 eggs 
- 1 cup shredded cheese 
- 4 cups of cooked/ microwave white or brown rice 
- 2 cans lentils 
- ½ cup Frozen vegetables 
- 2 tbsp chopped parsley 
Methods:
- Preheat oven to 180C/ 160C fan forced. Coat a baking dish with olive oil. Drain and rinse your lentils, set aside. Dice your onion and mushrooms, set aside. 
- Heat 2 tbsp of olive oil in a large frying pan over medium heat. Add the diced onion and stir occasionally until golden. Increase the heat to medium-high add the mushrooms, stir occasionally until lightly browned. Remove pan from heat. 
- Whisk together the milk, eggs and cheese in a large bowl, add the rice, parsley, lentils, frozen vegtables and onion mushroom mixture, stir to combine. Transfer the mixture to the baking dish. (optional add cheese on top) 
- Bake for 20-25 minutes or until golden brown
