Lentil, mushroom & rice bake

This lentil, mushroom & rice bake is a hearty bake which uses cost-effective ingredients.

Ingredients:

  • 2-4 tbsp olive oil

  • 1 brown onion diced

  • 200g cup mushrooms diced

  • 1 cup milk

  • 2 eggs

  • 1 cup shredded cheese

  • 4 cups of cooked/ microwave white or brown rice

  • 2 cans lentils

  • ½ cup Frozen vegetables

  • 2 tbsp chopped parsley

Methods:

  1. Preheat oven to 180C/ 160C fan forced. Coat a baking dish with olive oil. Drain and rinse your lentils, set aside. Dice your onion and mushrooms, set aside.

  2. Heat 2 tbsp of olive oil in a large frying pan over medium heat. Add the diced onion and stir occasionally until golden. Increase the heat to medium-high add the mushrooms, stir occasionally until lightly browned. Remove pan from heat.

  3. Whisk together the milk, eggs and cheese in a large bowl, add the rice, parsley, lentils, frozen vegtables and onion mushroom mixture, stir to combine. Transfer the mixture to the baking dish. (optional add cheese on top)

  4. Bake for 20-25 minutes or until golden brown
