Chicken Tray Bake

Ingredients

  • 500g chicken breast, sliced in half horizontally

  • 200mls of marinade - honey soy, teriyaki or tandoori

  • 1 small sweet potato, cut into pieces

  • 1 medium zucchini cut into slices

  • Butternut pumpkin cut into pieces

  • 2 carrots cut into pieces

  • Olive oil spray

  • Baby spinach leaves to serve

Method

  • Pre-heat the oven to 200C fan forced.

  • Place sliced chicken pieces in a bowl and add your choice of marinade, place in fridge for min 30mins.

  • Place pumpkin, sweet potato, zucchini and carrot on a tray and spray with olive oil

  • Place in the oven and bake for 15mins

  • Add the chicken pieces to the tray and cook for a further 20-25mins or until chicken is cooked.

  • Serve with baby spinach leaves

Note: make an extra tray for lunches
