Haloumi and Chickpea Salad

Ingredients

100g Green Beans

400g can Chickpeas (Drained and Rinsed)

Zest and Juice 1 Lime

4 Tbsp Olive Oil

½ Red Chilli (De seeded and Finely Sliced)

4 Radishes (Finely Sliced)

2 Ready Roasted Peppers (from a jar)

100g cherry tomatoes halved

Good handful of rocket

Small bunch of parsley chopped

140g Haloumi (Sliced)

Method

In a pan of boiling water, add your beans and cook for approximately 3 minutes until slightly

softened. Add chickpeas to the beans and cook for a further minute. Drain and let sit.

In a bowl, add chilli, olive oil, lime juice and zest with a little pepper and give it a good stir. Add

beans and chickpeas to this mix and toss.

In a pan, add a little olive oil and lightly cook your haloumi. Add Haloumi and remaining

ingredients into the bowl with the chickpeas and beans, toss and you’re ready to go.

*If your not a huge fan of radish you could substitute red onion into this salad, just slice half a red

onion into thin slices, pour boiling water over it and leave for a couple of minutes to soften.
