Banana Pancakes

Ingredients:

  • 2 Small ripe bananas

  • 2 eggs

  • 4tbsp wholemeal self raising flour

  • Spray oil

  • Fruit to top pancakes

Method:

  • Mash bananas in a medium bowl until smooth. Whisk in egg, then flour until smooth. Set aside.

  • Lightly spray a medium non-stick frypan with oil and heat over medium heat. Spoon batter into the pan at your desired size and spread out to a 1 cm thickness. continue till your batter is all cooked.

  • Top with fruit of your choice
